How Plants Protect Themselves
Because plants cannot run away from danger or threats, they have developed alternative defense mechanisms. This is because polyphenols function as signaling molecules. They provide a mild biological stimulus that triggers the hormetic defense switch inside cells—known as the Nrf2 pathway. When Nrf2 is activated, it signals human cells to produce their own powerful, endogenous antioxidant enzymes, such as superoxide dismutase and glutathione peroxidase. These enzymes are exceptionally effective at protecting, repairing, and rejuvenating cells and DNA.
What Are Free Radicals and Antioxidants
We are all familiar with vitamins—a group of essential micronutrients that keep your body functioning properly. Well-known vitamins like C and E act as antioxidants and help neutralize harmful free radicals. Free radicals are unstable molecules that damage proteins, lipids (including cholesterol), and DNA. This process is called oxidation. Free radicals enter your body through smoking, consuming ultra-processed foods, drinking alcohol, a lack of exercise, and environmental factors such as air pollution and sunlight (particularly UV-A). High-performance and endurance athletes also generate large amounts of free radicals, as intense exercise is another source. Sometimes, your immune system itself is the primary source of free radicals, generating oxidants as targeted metabolic weapons to clear out bacteria, viruses, and cellular debris.
Antioxidants neutralize free radicals on a 1-to-1 ratio. In other words, they counteract oxidation—hence the name antioxidants. For years, doctors and scientists advised eating a diet rich in vitamins. Now, evidence shows that the daily apple offers relatively minor protection from the vitamin C in its flesh; its health benefits are primarily due to the polyphenols concentrated in the apple's skin.
Polyphenols activate numerous processes, such as Nrf2, capable of neutralizing thousands of free radicals simultaneously. Because polyphenols deliver their protective, repairing, and rejuvenating effects through your diet, it is essential to consume polyphenols every day.
Where to Find Polyphenols
The easiest way to get polyphenols is by eating colorful fruits and vegetables (with the skin on) that feature spicy, bitter, or astringent flavors. Coffee, tea, red wine, and beer also contain polyphenols.

One of the most vital sources of polyphenols is bitter olive oil with a peppery finish. Why? The bitter taste indicates the presence of hydroxytyrosol, a potent polyphenol that offers protection against cholesterol issues, cardiovascular diseases, dementia, Alzheimer's, cancer, and diabetes. The peppery finish signals oleocanthal, an anti-inflammatory compound often referred to as nature’s version of ibuprofen (without the side effects). Additionally, olive oil is rich in healthy fats, which are essential for absorbing many polyphenols. A daily dose of polyphenol-rich olive oil is a major step toward a healthy, youthful, and fit body.
